| Edamame Salad 8 oz. package frozen edemame thawed (shelled) 1/2 c. dried cranberries (Craisins) 1/4 c. chopped fresh basil 4 scallions (pale and white) 1/2 c. crumbled feta 1 tbls. olive oil Place cranberries in small bowl and cover with 1/2 c. hot water. Let stand until berries are soft(10 min.) Drain. While berries are soaking, combine edamame, feta, scallions, basil in another bowl. Stir in olive oil and cranberries. Season with salt and pepper to taste. For Extra Yum - add 1/2 c. toasted pecans
